I think that the default app launchers in Docky should be reconsidered. I think that, while obviously changeable to suit the users need, the best approach would be to include only default Ubuntu apps as the original, default launchers. I think that rather then:
Banshee
Pidgin, or
Xchat
we should (keep FF and gnome-terminal) include Empathy, as the current default IM client, Rhythmbox, and Evolution. OpenOffice is also a possibility.
I think that these apps are used by a very wide range of Ubuntu users, as well as other Distro's. I think it adds to user friendliness to include the apps that the person is most familiar and most likely using, so that they don't have to change all of them with each clean install.
Another possibility is to run a check of Preferred Applications, and use these applications as the default launchers.

The preferred applications check would be a smart choice if ever or whenever docky gets to read gnome-do's launch habits. However, i don't see why docky should prefer one distro's default applications. if anything it ought to install using any distro's default apps based on a generic_name:
Media Player, Word Processor, Web Browser, etc.
Thus docky respects any distribution of linux' _or_ the users' choice of default apps
