I wasn't able to get nvidia-settings to work - but I did get my second monitor to show up - i'm using 173.14.30-0ubuntu8 driver with my GeForce FX 5200 card.

just added the 'twinview' option to the default xorg.conf:

 Identifier "Default Device"
 Option "NoLogo" "True"
        Option "twinview"
