Interestingly, I'm not able to reproduce my findings in the comment above with a stock Lucid install (choosing just openssh in tasksel, then installing nfs-common and turning on statd, gssd, and idmapd in /etc/default/nfs-common).
However, I did verify that, on the systems I can reproduce this on, /etc/init/{idmapd.conf,rpc_pipefs.conf} are unmodified from what nfs-common 1:1.2.0-4ubuntu4.1 provides. (Other than my added sleep for testing, of course.)
I'll have to do some more digging to see if I can come up with a repro case.
