Update regarding my previous comment:

After resetting the VM (in the Hyper-V connection -> "Action" -> "Reset") the VM rebooted, showed the login screen for the first time and I could login. But right after the login the screen was stuck again - there was no menu bar with the program launch icons on the left (a.k.a. "dock"), the bar on the top was empty except for the three indicators in the top right corner (network, sound, power), right click on the background didn't do anything and there was just the time being displayed in the center. Nothing happened for at least 15 minutes.

Then after resetting *again* and logging in a second time, finally the typical welcome screen of Ubuntu appeared ("What's new in Ubuntu", the program launch bar on the left etc.) and I could properly use the system.
