Deactivating USB keyboard support on the BIOS seems to have fixed the problem on my Gigabyte MA69GM-S2H (AMD 690G chipset).
I have been using USB 2.0 devices (at around 11 MB/s) ever since without a problem nor a reset so far (around 5 weeks now).
The only problem introduced by this solution is that I can't use my usb keyboard to select which partition to boot from on the grub menu.
Tested on debian squeeze and ubuntu hardy.
