You can define your own keyboard shortcuts in most GNOME applications. System -> Preferences -> Appearance -> Interface, check "Editable menu shortcut keys". Then mouse-over the item in the menu and hit whatever shortcut you want to remap it to. This should work for most things in GNOME, the notable exception being Evolution.
