The solution is to rename the dictionary files (i.e. en_GB.aff, en_GB.diff) replacing the underscore ("_") with a "-" and deleting the link.
However doing this will cause (at least had caused on my Ubuntu 9.04+OOo 3.0.1) OpenOffice not to find the dictionaries.
