@Shannon: Evolution itself has no skins; whatever is used is taken from the Gnome/XFCE/Whatever session setup.

For the click-on-pst-and-Evo-kicks-in part: I am not sure. Perhaps it can be done, but it would be something done upstream. You can open such a request -- a bug, actually -- at http://bugs.gnome.org, or open a new one on LP (and I will forward it upstream).
