If you're just now migrating from a Windows/Outlook environment, you could always use Crossover Office from Codeweavers which enables you to run Outlook 2003 directly under linux using a Wine compatibility layer. I ran this for a while until I was able to move away from Outlook/Exchange and found most of the time it ran quicker than Outlook under Windows.
I know it's not the best or most linux native solution but until .pst importing into Evolution or whatever is properly supported it's probably the easiest way to go.
