Although untested it shouldn't be a problem changing the gconf key.
The gcon key exist because stacks trasher is just a specific version of the stack applet.

I don't know why you have this gconf key: avant-window-navigator/applets/Trasher/trash_dirs though?
it should be something like: avant-window-navigator/applets/stacks/trasher/trash_dirs/backend
default it should be set to "trash:"
