We have been trying to run the FreeAdhocUDF library and other custom UDF without any success on Jaunty. I've checked where you installed firebird's libs and includes but libib_util.so is not in the same location as the others. Firebird does not crash but behaves incorrectly because of this. When I copied libib_util.so in /usr/lib, all of the UDFs worked without hiccups and I didn't even need to specify the full path of the UDF when declaring external functions.
This library is crucial for memory allocation in UDFs but because firebird can't find it where it's currently at it doesn't behave correctly.

I accidently just opened a bug report about the same problem for firebird 2.0: bug # 517044 which has been closed as Invalid within minutes for some rather questionable reasons. The problem is in no way fixed.
